Ingredients
  

Egg Bites

  • 4 eggs large
  • 1/4 cup diced turkey lean, cooked
  • 1/4 cup fresh spinach chopped
  • 1/2 tsp basil dried or fresh
  • 1/4 cup cheese low-fat, shredded
  • 1/4 tsp salt to taste
  • 1/4 tsp pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a muffin tin lightly with cooking spray.
  • In a bowl, whisk together eggs, salt, and pepper until fully combined.
  • Stir in spinach, diced turkey, basil, and shredded cheese.
  • Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  • Bake for 20 minutes, or until the egg bites are set and slightly golden on top.
  • Let them cool for a few minutes before removing from the tin. Serve warm and enjoy!

Notes

These egg bites are perfect for meal prep and can be stored in the fridge for up to 3 days. Reheat in the microwave for 30 seconds before serving.
