Ingredients
  

Grilled Salmon

  • 2 6 oz salmon fillets (wild-caught)
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp smoked paprika optional

Salad Base

  • 2 cups mixed greens arugula, spinach, or romaine
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber sliced
  • 1/4 red onion sliced thin

Dressing

  • 1 lemon juice + zest
  • 1 tbsp olive oil
  • 1 tsp honey

Instructions
 

  • Pat salmon fillets dry. Coat both sides with olive oil, salt, pepper, and smoked paprika.
  • Preheat grill to medium heat. Cook salmon for 4-5 minutes per side until flaky and lightly charred.
  • In a large bowl, toss mixed greens, cherry tomatoes, cucumber, and red onion.
  • Whisk together lemon juice, olive oil, and honey to create the dressing.
  • Place grilled salmon on top of the salad and drizzle with the lemon-honey dressing.
  • Garnish with fresh herbs or avocado if desired. Serve immediately and enjoy!

Notes

For a dairy-free option, skip the feta. Swap out veggies seasonally for variety.
