Ingredients
  

Salmon Bites Base

  • 1 lb salmon fillet diced into 1-inch cubes
  • 2 eggs beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp lemon zest freshly grated
  • 1 tbsp fresh dill chopped
  • 1 cup panko breadcrumbs for coating
  • 2 tbsp olive oil for frying or air fryer spray

Bang Bang Variation (Optional)

  • 2 tbsp sweet chili sauce mix into salmon base
  • 1 tsp sriracha mix into salmon base

Dipping Sauce (Optional)

  • 1/4 cup mayonnaise base for dipping
  • 1 tbsp lime juice fresh
  • 1 tsp chili sauce optional kick

Instructions
 

  • In a bowl, mix diced salmon, Dijon mustard, honey, lemon zest, dill, and optional chili/sriracha if making bang bang version. Do not overmix.
  • Form mixture into 1-inch balls or patties. Dip each into beaten egg, then coat with panko breadcrumbs.
  • For pan-frying: Heat olive oil in a skillet over medium. Cook salmon bites 2-3 minutes per side until golden brown.
  • For air fryer: Preheat to 390°F. Spray basket lightly with oil. Arrange bites in a single layer. Cook 7-8 minutes, flipping halfway.
  • For the dipping sauce: Mix mayo, lime juice, and chili sauce. Serve alongside bites for added flavor.
  • Serve bites hot with your favorite dip or on salad, tacos, or grain bowls. Refrigerate leftovers up to 3 days.

Notes

Make ahead by freezing shaped, uncooked bites. To reheat, bake at 375°F or air fry at 350°F for a few minutes. You can swap dill with parsley or cilantro depending on preference.
