Ingredients
  

Vegetable Base

  • 1 cup onion chopped
  • 1 cup celery chopped
  • 1 cup bell pepper chopped

Protein Options

  • 1 lb chicken thighs boneless, skinless
  • 1 cup smoked sausage sliced

Additional Ingredients

  • 1 cup okra sliced
  • 2 cups chicken broth
  • 1 tsp thyme dried
  • 1 tsp paprika
  • 1 tsp cayenne pepper adjust to taste
  • 1 tsp salt adjust as needed
  • 1 tbsp apple cider vinegar for balance

Instructions
 

  • Heat a large pot over medium heat and add olive oil. Sauté onions, celery, and bell peppers until soft.
  • Add the smoked sausage and chicken, cooking until lightly browned.
  • Pour in the chicken broth and bring to a simmer. Add the okra, thyme, paprika, cayenne, and salt.
  • Cover and simmer for 45 minutes, stirring occasionally.
  • Stir in apple cider vinegar before serving. Adjust seasoning to taste.
  • Serve hot with crusty cornbread or a fresh salad.

Notes

This soup tastes even better the next day. Store in the fridge and reheat when ready!
