Classic Vegan Waffles
- 2 cups Gluten-Free Flour Blend
- 2 tsp Baking Powder
- 1 ¾ cups Plant-Based Milk
- 1 tbsp Flaxseed Meal
- 2.5 tbsp Water
- 2 tbsp Maple Syrup
- 2 tbsp Coconut Oil (melted)
- 1 tsp Vanilla Extract
- ¼ tsp Salt
Combine flaxseed meal and water. Let it sit for 5 minutes until it thickens.
In a large bowl, whisk together the gluten-free flour blend, baking powder, and salt.
In a separate bowl, mix plant-based milk, melted coconut oil, maple syrup, vanilla extract, and the flax egg.
Slowly add wet ingredients to dry ingredients, whisking until smooth.
Preheat your waffle maker. Spray with oil if needed. Pour the batter and cook per the waffle maker’s instructions.
Serve with fresh berries, syrup, or your favorite vegan toppings.
